On our own olive finca we are experimenting with regenerative agriculture. We want to be a bright light in the world restoring the health of the soil, saving water, using solar energy and no chemicals. Buying our products supports these endeavours.

About Solymontes Olive Oils

Solymontes olive oil is made from small family-owned olive groves in one of the most pristine areas of Andalusia.

The groves are remote and inaccessible for large machinery. The mostly centenarian trees are not irrigated, so their strong roots extract minerals and nutrients from deep in the soil.

Solymontes olives are early-harvested by hand, while most are still green, which makes the oil particularly rich in polyphenols.  This creates a fresh and intense flavor with high health benefits.

Our olive oil is always fresh, always extra virgin, and always from the latest harvest. We make sure that you get the highest quality at the best price.

From small groves near the rural village of Ardales, exclusively pressed for you!

The olive trees for Solymontes are traditionally cultivated and the harvest is done by hand. The awesome flavor of our Early Harvest – deep and round with a hint of fire – is due to the coupage of three local varieties, Picuda, Mazanilla and Hojiblanca, in a ratio of about 80% green and 20% ripe olives. The freshly harvested olives are immediately pressed and bottled in the local mill. Within days, we are already shipping to your home.

Solymontes Extra Virgin Organic

Our Solymontes Organic Olive Oil comes from the Sierra de las Nieves Biosphere Reserve, a stunning area of majestic mountains and deep valleys.

The organic groves are family-owned, as is the mill in the village of El Burgo, where the oil is pressed. The organic olives are harvested early and pressed immediately conserving the precious ingredients and intense flavor.

Solymontes Organic is made from three varieties: Picual, Hojiblanca and Zorzaleña.

So how exactly do I get my Special Early Harvest?

The olives for our Special Early Harvest come from small groves around our little village. Every year in September everyone here talks about the olive harvest, when and how much and whether it will be a good year or not.

This is when we start to collect your pre-orders, so that we are prepared to pick and press and bottle and ship our oil extra mega fresh to your table.

This is how it works:  When the time comes, you will recieve a link for the pre-order via our newsletter. Then you have about 10 days to place your order.  The olive oil is literally produced for you and arrives within a few weeks after the harvest.

What's so special about Solymontes Olive Oil?

  • Early Harvest
    Because we harvest earlier than most, the olives contain more antioxidants (and less water) and the oil is particularly aromatic
  • Traditional Harvesting by Hand
    and therefore particularly gently (the olives get less bruised than with machine harvesting)
  • Three Varieties: Picual, Manzanilla and Hojiblanca
    Solymontes Olive Oil is pressed from three local varietes that have a particularly high content of polyphenols. Pholyphenols are some of nature’s most potent antioxidants.
  • Quick Pressing
    Solymontes olives are pressed shortly after harvesting in the local mill, that way we make sure that no rotten spots can build
  • Immediate Bottling
    Solymontes Olive Oil is bottled shortly after pressing (instead of being stored in large containers for months or even years)
  • Centenary Trees
    Solymontes olive trees are hundreds of years old, so they have very deep, strong roots that extract nutrients from the mineral soil. This makes for a particularly aromatic oil. 
  • Remote Groves
    Solymontes olive trees grow in remote groves on the mountain slopes around the Andalusian villages of Ardales and El Burgo
  • No irrigation
    so the trees undergo hormesis and produce a high level of antioxidants that make the oil extra healthy and aromatic

What to Look For When Buying Olive Oil

It Must Be Extra Virigin 
“Virgin” means the oil has been pressed by mechanical means withouth heat so that the valuable ingredients are preserved. “Virgin extra” is a quality attribute that primarily focusses on taste and a certain composition of contents.
BUT: Extra virgin olive oil is not a protected label, and the olive oil industry is huge. There is always some cheating going on.If it just says “Olive oil” on the bottle, it is virgin mixed with refined oil in an unspecified ratio – refined oil is practically free of taste, aroma, and natural ingredients other than fat.

  • It Must Be Fresh
    The powerful polyphenols to which olive oil owes its unique flavour and health-benefits are volatile and get lost over time. 
  •  
  • It Should Have a High Polyphenol Content which results from many factors: The variety, the soil condition, the time of harvest, the way it is pressed, the processing and storage, and the packaging (don’t even look at “olive oil” in a clear plastic container …) .
  •  
  • Harvesting by  Hand which is gentler, ensures fewer damaged spots on the olives, protects jobs in traditional agriculture, and does not endanger birds and other wildlife.
  • Large olive oil producers usually cultivate enormous groves where the olives grow in monoculture. They harvest with large machines, which saves labour, but also leads to more mushy or damaged olives and kills millions of migrating birds every year.

    which makes the oil particularly healthy and aromatic. The later the harvest (meaning the darker the olives) the milder the taste and the lower the content in natural health ingredients.

    prevents rotting and makes for a balanced and not too bitter taste.

    Bottling Shortly After Pressing

    The best-before date on your bottle of olive oil from the supermarket refers to the bottling date: according to EU law, olive oil has a shelf life of 18 months from bottling.
    There is no way of knowing how long the oil has been stored in large containers beforehand. This is perfectly legal, but of course it has an impact on quality.
    Large producers in particular use this possibility to be able to store any surpluses until they see a demand. Therefore:

    The Harvest Date should Be Stated on the Bottle
    Many producers now do this, including us. It gives you the security of having fresh oil on the table that still preserves all its goodness and aroma.

    Light-Protecting Packing 
    i.e. a tin or a dark bottle because the vitamins and polyphenols react to light (don’t even look at “olive oil” in a clear plastic bottle.
